Change Key Under EV1 Messaging

All,

Simply, Am I supposed to be able to change keys freely after changing from default to a random key?

Code developed on TI embedded micro.

My situation, is my routines are happy to load a key from a default value. But, once loaded
I cannot change back to the default value Or, some other random value.

This is true for both App keys and the PICC master key. All key settings are at default.
In all cases I am targeting the same key for which I am authenticated.

I feel surely, I am missing something?
I have been referencing page 83 of the latest EV3 chip documentation (as DocStore doesn't seem to offer the older documents ? ) .
